Ingredients

4 Forester Farmer’s Market® Boneless Skinless Breasts
2 cups fresh basil leaves
1/2 cup olive oil
1/2 cup grated Parmesan or Romano Cheese
1/2 cup grated grana Padano Cheese
4 garlic cloves, chopped
1/2 cup pine nuts, toasted
1/4 teaspoon salt
1 Cup Shredded Mozzarella Cheese
8 ea. Slices Provolone Cheese
3 Roma Tomatoes Sliced

Preparation

    Preheat oven to 400 degrees F. Flatten chicken breasts (about 1-inch thickness) and place in casserole dish (sprayed with non-stick cooking spray)

    Spread 1 tsp. basil pesto sauce on each chicken breast. Bake (uncovered) for about 15 minutes.

    Remove chicken from oven, add thinly sliced tomato, 2 slices of Provolone Cheese, 1/4 Cup mozzarella cheese to each chicken breast. Place back in oven for about 5-7 minutes (until cheese is melted).
