4 ea. Forester Farmer’s Market® boneless, skinless chicken breasts
4 pcs bacon
2 Tbsp. honey
1 Tbsp. Dijon mustard
Salt & Pepper as needed for taste
Zest from 1 orange
Splash of Lemon Juice
Preheat the oven 375°
Peel & Dice apple & pear.
Lay each chicken breast flat between plastic wrap and pound the breast until it is equal thickness throughout. This will ensure even cooking.
Season Chicken Breast with Salt & Pepper
Lay 1 slice of bacon & 1 tbsp. of fruit mix in center of each breast
Roll long side of breast and tie breast with string. Repeat with all breasts.
Brown chicken breasts on stove top.
Then finish by baking at 375° for 30 minutes in the oven or until chicken reaches an internal temp of 170°.
While chicken is baking, combine Dijon Mustard, honey, orange zest and lemon juice into a sauce. Drizzle sauce over chicken breasts before serving.
