Bruschetta Stuffed Chicken

8 ea. Forester Farmer’s Market® boneless, skinless chicken breasts
1 can Italian Style Diced Tomatoes
1 1/4 Mozzarella Cheese Shredded
1/4 Cup Fresh Basil Chopped
6 oz. Savory Stuffing Mix
1/3 Cup Italian Roasted Red Pepper W/Parmesan Dressing
Salt & Pepper to taste
Preheat oven 350°
Lay each chicken breast flat between plastic wrap and pound the breast until it is equal thickness throughout. This will ensure even cooking.
Mix tomatoes, stuffing, basil and half the cheese together
Season the chicken breast with salt & pepper
Fill the center of each breast with 2 Tbsp. of tomato mixture and roll from the small side to the large side of the breast,
Lay seam side down in a baking dish.
When all breast are in the pan, pour the dressing over the chicken.
Bake the chicken for 30 minutes
Remove from oven and top with remaining cheese
Bake an additional 5 minutes until cheese is melted.
Garnish with fresh Basil
