Dubliner Cheese Stuffed Chicken

4 ea. Forester Farmer’s Market® Boneless Skinless Breasts
8 oz. Kerrygold Dubliner Cheese
6 oz. Bread Crumbs
1 oz. Mediterranean Herbs, finely chopped
2 large Eggs, beaten
1/2 tsp. Salt
Preheat Oven to 350°
Use a meat tenderizer to pound out the chicken breasts until about ¼-inch thick
Grate 3.5 oz. Kerrygold Dubliner Cheese and cut the remainder into thin slices.
In a bowl, mix together the bread crumbs, herbs and grated Dubliner Cheese.
Lay the slices of cheese in the center of the breast and roll the chicken around the cheese
Dip the chicken in the beaten eggs then roll in the seasoned bread crumb mixture
Place the chicken breast seam-side down on a sheet pan and bake for 25 – 30 minutes until chicken reaches an internal temperature of 170° F.
